What is the purpose of the green acres map. What is this generally used for? Also, how big is it?

I thought it was for staff to plot & test various ways to kill players.... Thats what I've used it for.

Nice. That's what I might use it for if I had players. Or I can just use it to film the latest edition of "Britanians Gone Wild".

hehe. Yup always been a staff area. 
If you have the latest client in one of them you will notice rows and rows of new tiles. I think EA may still use this area to see the looks of items in game before adding it to public areas. My green acers is filled with half completed projects and unique items I have found using InsideUO

I wasn't familiar with InsideUO either. I just googled it. I think I'm going to have to check that out.
